Cuixhe’s 7ft tall, palm-tree like stance and its aggressive spikes were used as natural protective barriers for the indigenous of Mexico. These unmistakable agave comprises less than 1% of the agave population in Oaxaca and take up to 18 years to mature. Those hard fought years of growth are recorded through the complexity of its gassy, herbaceous, citrus, peppery aromas and flavors, and preserved through clay pot distillation and aging in glass.
